---- — Seeing an opportunity to help a local business owner succeed in her new endeavor, the Zionsville Redevelopment Commission is helping to make the Salty Cowboy the newest restaurant in town. The commission approved an amount up to $14,820 for Shari Jenkins, the owner of Noah Grant's Grill House and Oyster Bar, to install a 1,500-gallon grease trap for her new Mexican restaurant she hopes to build at 55 E. Oak St. The approval is contingent on Jenkins receiving a second bid, and Commission President Luke Phenicie will make the determination which company should do the work. Jenkins originally requested up to $24,800 to cover the cost of the grease trap and sewer hookup fees, which were another $10,000. See Wednesday's Times Sentinel for the full story.
