---- — Shari Jenkins is already a successful restaurant owner, making Noah Grant's Grill House and Oyster Bar a favorite place to dine in the community.

Jenkins felt Zionsville still needed a new dining option and has begun work to turn 55 E. Oak St. into the Salty Cowboy, a Tex-Mex style restaurant she hopes to open in late spring.

"I still think there's a need in Zionsville for different ethnic foods," Jenkins said. "It's going to be different than anything in town or around here and just a different style of place than what is here now."

The building used to house Le Dolce Vita. Jenkins said a lot of work is being done to the 2,000 square feet of space.

"The front was the bakery, and the back was offices," she said. "We are turning the whole thing into a restaurant, so we're doing some demolition right now. It will be family friendly in the front of the building, and we'll have a separate bar area in the back."
